Spiced Walnuts and Apples Oatmeal

Ingredients

1 cup chopped dried dates
3 cups rolled oats
3 cups grain cereal flakes
1 cup chopped walnuts
1 cup chopped dried apples
1 cup cane sugar
1 teaspoon ground garlic cloves
1 teaspoon ground turmeric
1 tablespoon ground ginger
Ground cinnamon (for topping)

Direction

•In a large bowl, combine the dried dates, rolled oats, grain cereal flakes, chopped walnuts, chopped dried apples, cane sugar, ground garlic cloves, ground turmeric and ground ginger.

•In a microwave, boil one cup of water and pour it over the large bowl.

•Stir the oatmeal mix and make sure every dry ingredient softens. Let it stand for 10 minutes before serving.

•Dust ground cinnamon on top and serve immediately.

Lunch

Fiber-Rich Fettuccine Alfredo Pasta

Ingredients

10 ounces fettuccini pasta
5 cloves garlic
1/2 cup fat-free butter
1 cup of soymilk
1 cup cashew cream
2 cups fat-free Parmesan cheese
2 tablespoons parsley

Directions

•In a large pot, bring salted water to a boil and add the pasta; cook until al dente then drain.

•Meanwhile, in a medium-sized skillet, add garlic and fat-free butter then cook for 3 minutes until garlic turns light brown.

•In a small bowl, add soymilk and cashew cream; mix them well.

•Add the parsley and cheese to the cream mixture and mix until it smoothens.

•Serve the fettuccine pasta on a large serving plate and pour the Alfredo sauce.

•Toss the pasta and the sauce together to evenly coat it.

•Garnish with parsley and serve.

Vegetable Salad Duo in Tofu and Balsamic Dressing

Salad 1 Ingredients
2 tablespoons red wine vinegar
3 cloves garlic
1 ounce dried cranberries
2 tablespoons balsamic vinegar
1 teaspoon salt
225 ml extra virgin olive oil
3 small heads radicchio
3 bunches watercress
3 bulbs fennel
2 oz. toasted pecans
Gorgonzola cheese (for topping)

Directions

•In a small bowl, combine the red wine vinegar, garlic, dried cranberries, balsamic vinegar and salt. Slowly whisk in the olive oil to emulsify.

•In a large salad bowl, combine the radicchio, watercress, fennel and toasted pecans.

•Pour the balsamic dressing over the salad and top with shavings of non-dairy gorgonzola cheese.

Salad 2 Ingredients
Salt and freshly ground black pepper to taste
1 cucumber (chopped)
1/2 red onion
1 tin kidney bean
100g firm tofu
1 tomato
Handful chopped fresh basil
4 tablespoons salad dressing of choice

Directions

•In a large bowl, combine the cucumber, red onion, kidney bean, firm tofu, tomato and basil.

•Toss with balsamic dressing, season with salt and ground pepper.

•Serve on plate and enjoy with fresh shavings of a non-dairy cheese of choice.
