  • 2 large eggs

  • ¾ cup bacon, diced
  • 1 cup scallions, sliced
  • ½ cup bell pepper, diced

Procedure:

  1. Prepare 12 muffin cups. Put cooking spray.
  2. Preheat oven to 400F
  3. Combine the 2 kinds of flour, baking soda and powder with the salt and pepper. Place it in a bowl.
  4. In another bowl, mix buttermilk with 2 eggs and butter. Mix in cheese, bacon, bell pepper and scallions.
  5. Add all wet and dry ingredients together. Place mixture evenly in each muffin cup or prepared pan.

Lunch: Grilled Eggplant Sandwich

Ingredients:

  • 1 eggplant, sliced into rounds
  • 1 clove garlic, chopped
  • 1 teaspoon lemon juice
  • Virgin olive oil cooking spray
  • ¼ cup low fat mayonnaise
  • 2-3 Portobello mushroom
  • 1//2 teaspoon salt
  • 1//2 teaspoon pepper, ground
  • 2 cups spinach, chopped
  • 1 tomato, sliced
  • Slices of whole wheat bread

Procedure:

  1. Prepare to grill in medium or high temperature.
  2. In a bowl, combine mayonnaise, garlic and lemon juice then set aside.
  3. Season eggplant and mushroom with salt and pepper then spray with virgin olive oil. Grill the vegetables until both sides turn brown. Eggplants cook for around 2 to 3 minutes while mushrooms turn brown for 3 to 4 minutes. Wait until the vegetables cool down. Slice the mushrooms.
  4. Spread mixture of mayonnaise, garlic and lemon juice on the slices of bread. On top of the sandwich, layer the grilled vegetables and add the chopped spinach. Put in tomato slices and cover with remaining bread.

Dinner: Stir-Fried Asparagus with Quinoa Noodles

Ingredients:

  • 2 bundles asparagus, washed, trimmed, and cut into bite-size pieces
  • 12 ounces dried quinoa noodles
  • 1 tablespoon extra-virgin olive oil
  • 3 tablespoons fresh ginger, minced
  • 2 cloves garlic, slivered
  • 1 tablespoon soy sauce
  • 1/2 tablespoon sugar
  • 3-1/2 tablespoons low-sodium vegetable stock

Procedure:

  1. In a wok, heat oil over medium heat. Add in ginger and garlic. Stir fry until lightly browned for about a minute. Add asparagus.
  2. In a separate bowl, whisk in soy sauce, vegetable stock, and sugar. Blend well and pour over asparagus. Simmer for about 3-5 minutes or until asparagus is tender.
  3. Meanwhile, in a separate pot, cook Quinoa noodles according to package directions. Serve noodles with stir-fried asparagus while hot.
