  • ¾ cups extra virgin olive oil
  • 5 cups spinach leaves, washed and torn into bite-size

  1. Boil water and cook pasta following instructions at the back of the package. Add salt to boiling water. Drain when it is already al dente.
  2. In a small pan, heat extra virgin olive oil then let it simmer. Sauté garlic. Wait for the garlic to turn brown. Transfer to a small container but drain excess oil using paper towel.
  3. In a separate pan, add a teaspoon of extra virgin olive oil. Place the sun dried tomatoes, pine nuts and spinach. Cook for 3-4 minutes or until spinach droops down.
  4. Toss pasta with sun dried tomatoes, pine nuts and spinach mixture. Add salt and pepper to taste. Top it with parmesan cheese and garlic.

Spinach and Sun Dried Tomato Pasta is very easy. You can prepare it for 30 minutes or less. It is a perfect lunch dish for those who are on the go and preparing their own food before going out for work.

Dinner: Sweet and Sour Beef Cabbage Soup

Ingredients:

  • ¾ cup cubed ground beef
  • 1 cup tomatoes, diced
  • 1 cup onion, diced
  • 3 cups green cabbage, chopped and shredded
  • 8 cups water
  • ½ cup carrots, sliced
  • ½ cup celery, sliced
  • 1 cup brown sugar
  • 1-2 tablespoon cider vinegar
  • 1 tablespoon olive or canola oil
  • 2 tablespoon tomato sauce
  • 2 tablespoon flour
  • Salt and pepper to taste

Procedure:

  1. In a casserole, put together water, beef, tomatoes, onion, cabbage, sugar, celery and cider vinegar carrots. Add tomato sauce as well. Stir and boil with medium heat. Wait until vegetables are cooked and beef becomes tender.
  2. Place flour and oil in a pan. Boil and stir until consistency becomes thick. Place this mixture in the casserole with the beef and vegetables.
